I bought some lemon poppy seed scones from King Soopers the other day and I loved it. But then I thought, why should I buy them, I can do that! So I searched a recipe and here it is 🙂
Ingredients
Scones
- 3 C flour
- 1 C sugar
- 3 tbsp poppy seeds
- 1 tbsp baking powder
- 2 tsp grated lemon zest
- 1 tsp salt
- 10 tsp butter
- 1 egg
- 2 tbsp lemon juice
- 1/3 C milk
Glaze
- 1 3/4 C powdered sugar
- 1/4 C lemon juice
- 1 tsp butter
Step 1: Scones
Preheat oven to 375˚F.
I don’t have a food processor, so I do all with a hand mixer. Mix all dry ingredients together, also the lemon zest. Beat the egg until foamy, then add lemon juice and milk. then mix dry and wet ingredients together until you get a dough.
Step 2:
Roll out the dough. I like the little bite-sized scones, thats why I first cut the dough in stripes and then into little triangles. Bake them for around 20 min.
Step 3: Glaze
Mix sugar, butter and lemon juice together until you get a smooth glaze. When the scones cooled down a bit, you can brush them with the glaze and let it dry.
