Mango Curry Sauce

Well, this is one of my recipes. I used whatever I thought would be good! 🙂

Ingredients

  • 3 cans Coconut milk (~ 600g)
  • 2 mango
  • 1 big nion
  • 3 cloves garlic
  • 1,5 tbsp coriander paste
  • 2-3 tbsp curry paste (green or red)
  • 1 tsp curry powder
  • 1kg smoked tofu / chicken
  • 2 tbsp smoked paprika powder
  • 1 tsp rosmary
  • 1/3 tsp salt
  • black pepper
  • 1/3 C olive oil
  • maybe rice as the side

Step 1:

Mix oil, rosmary, smoked paprika powder, salt and pepper together. Chop tofu in cubes ( ~ 2cmx2cm) and marinade them with the oil-mixture. I just let them sit for 15 min and fried them.

Step 2:

Chop onions in small cubes and mince the garlic. Peel the mango and cut in cubes too.  Stew the onions with garlic until translucent, then add mango and coconut milk.

Step 3: 

Season the sauce with the rest of ingeredients: curry paste and powder, coriander and again some salt and pepper. Throw the tofu in the sauce and voià! It goes well with rice.
