Rożki Serowe (polish cookies)

I just found this recipe randomly and tried it for Christmas.  We were like “OMG this is delicious!!!” And there is really not much to it.. easy. The dough is like puff pastry. They were immediately gone and I had to make a second round. I might try it the next time with plum jam (my dad loves it!).

Ingredients

  • 250g curd (quark)
  • 250g flour
  • 250g butter, soft
  • ca. 300g jam (I used strawberry)

Step 1:

All goes into a bowl and mix well with you hands. Let the dough sit for at least 1h in the fridge, wrapped in cling film.

Step 2:

Spread flour over your countertop (I use a baking silicone mat) and roll your dough out, ca 5mm high. Cut in 5cm x 5cm squares. Fill with ca 1 tsp jam (I use bit less because it mostly runs out when I do it and makes a mess) and fold two opposite corners together (you really have to knead them together, otherwise it will open again while baking).

Step 3: 

Pre-heat oven to 180°C and bake them until they’re gold brown.
