So, this is one of my favourites and also the recipe I get asked for the most! It goes well with a lot of things, but especially with oven potatoes (with salt, black pepper, olive oil and rosmary). Delicious!! Try it.

When I got the recipe I chose my daily meals for over a week in a way I could eat aioli to it.

Ingredients

  • 1 egg
  • 1tsp yellow mustard
  • 400ml oil (depending on how much you want to make)
  • 4 big garlic cloves
  • 1 lemon
  • salt, black pepper powder or ground

Step 1: Mayonnaise

Seperate the yolk from the egg white (you don’t need egg white, so as long as you don’t plan on making “Bird Milk” or have another use for it, throw it away) and put it in a bowl. Then add the mustard (it’s necessary, otherwise it doesn’t get thick – at least not when I do it) and stir it well .

IMPORTANT: Don’t use a mixer!!! Do it by hand with a cooking spoon!

So keep stiring and add again and again a dash of oil (stir it everytime  until it’s a smooth mass without oil cutting) until you have the amount of cream you want.

Step 2: Flavour

Chop the garlic really tiny and add it to the mayonnaise. Season it it as you like with salt, pepper and lemon juice.
