Super delicious creamy (basically potatoe) soup. when I cook soups I almost never hold on to units, I eyeball it. So the units here are just an approximate value.
Ingredients
- 2 shallot
- 250 g champignions
- 1 kg potatoes
- 1 tbsp butter
- 1,5 l veggie broth
- 1-2 tbsp rosmary (dry or fresh)
- 200ml heavy cream
- 2 tbsp honey
- 2 clove of garlic
- salt, black pepper
Step 1:
Peal the shallots, potatoes and garlic. Chop onions and garlic and stew them together in the butter (in your soup bowl).
Step 2:
Cut the potatoes and mushrooms in cubes and add it to the bowl. Then pour the hot broth into the bowl until the veggies are covered and cook. Add the rosmary.
Step 3:
When the potatoes are soft, take the soup from the flame and mash everything until you get a nice, smooth cream soup. Season it with salt, pepper and the honey.
