Zucchini Carrot Cake

Don’t let yourself be fooled by the name, it’s super juicy and tasty! 

Ingredients

  • 120g butter
  • 120g sugar (I use brown sugar)
  • 1 packet vanilla sugar ( instead i add a tbsp sugar more and a dash of vanilla extract)
  • 4 eggs
  • 140g carrots, grated
  • 140g zucchini, grated
  • 160g flour
  • 120g hazelnuts, ground
  • 2 tbsp baking powder
  • 200g white chocolate and sugar sprinkles for the topping, or just powdered sugar

Step 1:

Mix butter with sugar and vanilla sugar until foamy. Add the eggs one by one and stir them well in. Add zucchini and carrots and mix in aswell.

Step 2:

Fold all the dry ingredients in. Fill the dough in a greased baking form and bake in the preheated oven for 50min, 180°C.

Step 3: Topping

Melt the white chocolate over a waterbath and pour over the done cake (while it’s still in the baking pan!). Decorate it with the sprinkles and let it cool down, so the chocolate can get hard.
