First time I ate this cake was at Finnegan’s Irish Pub and it was so tasty! I had to try to make it and I think it comes really close.


  • 8-9 oz biscuits (I used whole grain butter biscuits)
  • 6 oz melted butter
  • 13 oz white chocolate
  • 3/4 C Bailey’s
  • 4 oz icing sugar
  • 11 oz double cream or mascarpone
  • 1 lb soft cream cheese
  • for decoration: grated chocolate, chocolate powder, sugar shapes

Step 1:

Blitz biscuits until like sand. Melt the butter and mix it with the biscuits. Spread it in the baking pan and let cool in the fridge for at leasts 15 min.

Step 2:

Whip the double cream / mascarpone and also whip the cream cheese together with the sugar, then mix both creams together.

Step 3: 

Melt the white chocolate over a waterbath and add the Bailey’s. Mix the cream cheese mixture under the chocolate and spread over the biscuits. Let the cake sit again in the fridge for 3-5h so the cream can get solid. After that you can decorate it how you like.
