Very easy and light! I like to eat it to fish.

Ingredients

  • 200g couscous
  • 500ml water
  • 1 tsp salt
  • 1 tbsp olive oil
  • 4 tomatoes
  • 1 cucumber
  • 1 bunch spring onions
  • 1 bunch parsley
  • 1/4 C pomegranate syrop
  • pepper, salt

Step 1:

Let water with 1 tsp salt boil, then pour over the couscous and add the olive oil, then let it soak for 15 min.

Step 2:

Cut tomatoes and cucumber in little cubes, the spring onions in thin slices. Chop the parsley.

Step 3:

Mix everything together and season it with the syrop and pepper, see if you want more salt.

 

Source:  I got it from my mom and she has it from her iranian work collegue.
