This version of the “Flammkuchen” reminds me of our vacation in Crete, we ate there for dessert fresh goat cheese with honey and it was super tasty. The traditional toppings are: sour cream, onion and bacon; super tasty, too! You can use whatever you like, also make a sweet version with apples and cinnamon or chocolate.

Ingredients – 1 Flammkuchen

Dough:

  • 200g flour
  • 1 tbsp salt
  • 1 tbsp oil
  • 110ml water

Topping:

  • 150-200g sour cream
  • ground nutmeg
  • ca. 100g feta cheese
  • ca. 100g goat cheese (i used the roll, soft cheese)
  • 1 small red onion
  • 1 tsp rosmary
  • honey

Step 1:

Give all the ingredients for the dough into a bowl and mix and knead them with your hands until it doesn’t stick to them anymore (I used lukewarm water). Let the dough sit for at least 30 min.

Step 2:

Add nutmag to the sour cream, as much as you like. You could also add salt and pepper, but be careful, the cheeses are salty already. Cut the onions in thin slices, the goat cheese into small cubes and grade the feta.

Step 3: 

Roll out the dough (thin!) and add your toppings (besides the honey!!). You want to spread it loose, dont pack it to dense.

Bake it for ca. 20 min, 200°C.

After it’s done, you can put honey on top. It sounds weird, but it goes so well with the goat cheese!
